West and East African plates
A jollof is a pot, not a species. Split the stock, the meat, the dried fish in the soup, and the bread. Injera is teff. Suya is the skewer. Doro wat and kitfo are Ethiopian plates on the same aisle because people search them together.
Two-minute African-menu check
- Name the stock and the meat. Jollof stock is often chicken or Maggi. Suya is usually beef. Peri peri is chicken. Thieboudienne is fish.
- Then the soup and the bread. Egusi and waakye inherit dried fish or shrimp in the stew and the shito. Fufu is plant; the soup is the ruling. Injera is teff sourdough.
- Then the Ethiopian plates. Doro wat is chicken plus niter kibbeh (ghee sister). Kitfo is minced beef, often raw. Bobotie is Cape Malay mince.
