Japanese plates

A Japanese menu word is often a shape, not a species. Split the broth, the cut, the dashi, and the cooking wine. Eel is cited as fish; calamari and octopus are a cited school split. Mirin is alcohol, not a trace.

Two-minute Japanese-menu check

  1. Name the broth and the cut. Tonkotsu is pork bone. Katsu does not name the animal. Yakitori is chicken until the stall also does pork belly.
  2. Then the dashi. Kombu is kelp. Hon-dashi is usually bonito. Furikake often hides katsuobushi.
  3. Then the cooking wine and the seafood split. Mirin and cooking sake are alcohol. Calamari and octopus are a cited Hanafi vs seafood disagreement — follow the scholar you follow. Unagi sauce is not the eel.
