The word cheese on a pack is not a ruling. The coagulant is. Ask whether the rennet is microbial, plant, calf, or porcine.
Two-minute dairy check
- Find the coagulant. Rennet, rennin, pepsin, lipase, enzymes.
- Then the whey. Whey inherits the cheese it came from.
- Fining, if it is a drink. Isinglass is a fish bladder fining used in some beers and wines.
